Recipe for Almond Balls

My first CNY baking item was almond balls and many of my friends love it after they tried. ^^

I would say this is definitely much easier as compared to pineapple balls!

Recipe got from I COOK. I BAKE. I EAT. and I have amended it abit. :)


CNY Almond Balls

Ingredients (50-60 balls)
100g Ground Almonds
150g Self-Raising Flour
100g Caster Sugar
 Pinch of Salt
110ml Rice Bran Oil (the original recipe was Corn oil)
1 egg yolk, beaten (for eggwash purpose)

Method
1) Preheat oven to 180 degree C.
2) Sift the flour. Add it in with caster sugar and salt into bowl of your stand mixer.
3) Add in ground almonds.
4) With your mixer on medium speed, slowly pour the oil into the bowl of mixture & mix until it forms a dough.
5) Roll the dough into ~2.5cm balls and place on a baking tray lined with baking paper. Repeat until all the dough is used up.
6) Using a pastry brush, lightly glaze the tops of the cookie balls with the beaten egg yolk.
7) Bake for 15-20 minutes, or until the cookies become slightly golden.
8) Leave to cool on a wire rack for 10mins.

Recipe for CNY Cornflakes

CNY is around the corner and this year is my first time baking different types of CNY cookies! To make the starting process easier, I actually googled for the easiest recipe! :P

Also, I am gonna share the recipes & post it individually to avoid confusion :)

For this post, I have amended the recipe that came from Veganlogy. :) 
The taste was good & cornflakes were super duper crispy!

CNY Cornflakes with Raisins

Ingredients (70 cups)
125g Salted Butter
3 tbsp Maple Syrup
1 cup Raisins
6 cups Nestle Cornflakes

Method
1) Preheat oven to 170 degree C
2) Heat the butter and maple syrup together in a saucepan until the butter melts and bubbles appear.
3) Turn off the heat.
4) Add raisins & cornflakes into the syrup and mix all together until even.
5) Spoon the cornflakes mixture into paper cups.
6) Bake for 8-10mins & let it cool for 10mins.
7) If you want to store them in airtight containers, do cool them for an hour.
