It's kinda headache at times of what to cook for my son and the types of vegetables that he can eat at his current young age, is really limited :(

How I wish he can grow up faster & can eat what we eat! But at the same time, I don't wish that to happen too fast! Haha...

Normally I will cook the same type of porridge for lunch & dinner on the same day for him but yesterday, I got the mood to cook 2 types of porridge for him & he finished all happily! ^^

Steamed Pumpkin Cupcakes

I always wanted to make steamed cupcakes for my son ever since he knows how to chew (not an expert yet) so I decided to do it yesterday.

I chose the easiest recipe as in lesser types of ingredients to be used  & amended abit of its recipe to make it easier. :P

You can also make banana or carrot cupcakes too using the same recipe :)

Steamed Pumpkin Cupcakes


Ingredients (For 6 cupcakes)
170g Self-raising flour
25g Sugar (recommended to use Molasses Sugar for babies/toddlers)
180ml Full Cream Fresh Milk
60g cooked pumpkin

Method
1) Steam the pumpkin for 15mins.
2) Mash it & add to the flour in a bowl.
3) On a separate bowl, put sugar & milk together. Stir till sugar dissolves.
4) Mix both mixture (2) & (3)  together. Stir till no lumps.
5) Scoop the mixture & fill the paper cups 3/4 full.
6) Steam for 15mins.

*I put the paper cups on the metal cups.

Homecooked Brunch on Last Weekend

As there isn't much choices for nice food at Punggol area, I always prefer to cook.

Would like to share on what I have cooked for brunch for my hubby on last weekend. :)

These are simple dishes & took me less than an hour. Quite convenient for people who have kids like me.


Spaghetti with Portobello Mushrooms & Ham in Alfredo Cheesy Sauce/ Side dish: Cheesy Chicken Cocktail

Soft bones with mashed carrots & zucchini porridge

Recipe for Porridge

Ingredients
1 cup White Rice
1/2 pot of water
5 pcs Pork Soft Bone
1 Carrot
1/2 Zucchini

Method
1) Blanch the pork soft bone with boiling hot water.
2) Wash the rice & fill the pot with water 1/2 full. Put in the pork soft bone & cook for 1hr.
3) Dice the carrot & zucchini. Steam for 15mins.
4) Blend the steamed carrot & zucchini. Pour it into the pot of porridge on last 10mins & stir to mix.
5) Ready to serve.

$12 Yummy Steak Found @ Hainanese Village

I am a steak lover and was very happy that this western food stall is near my mum's place. They just started to sell better quality steaks since few years ago. I have been eating their western food since secondary school days.

I can't remember the name of the steak I ate but it costs at $12. They have a cheaper one selling at $8 but I still find the $12 one taste better. I love their bun because it was very soft & taste good with butter!

As you can see from the picture, the steak portion is big & the boss allowed me to change the baked beans to coleslaw. Their coleslaw was very fresh & tasty!

Do give it a try one day! ^^

Express Teppanyaki @ Foodcourt - Nex

My girlfriend recommended this delicious teppanyaki to me previously at Nex (Level 4 Foodcourt) & we went to there again yesterday for our dinner together with my hubby.

The price is so reasonable! It costs less than $10 for any meat (pork, chicken, beef or lamb) with bean sprouts & a type of vegetable. The gravy was really good! I love it to the max!

As I was too hungry, I forgot to take pictures of the vegetables :( However, I remembered to take a picture of my beef. :P

Do give it a try! You will not regret! And ya, if you are not very good in taking spicy food like me, please do not add chilly as it was so spicy for me when I ate it for my first time. So, I didn't ask for it yesterday & it taste great! ^^

Dine @ Eighteen Chefs

I saw a new restaurant called Eighteen Chefs at Nex on last week & decided to try it with my friends yesterday.

I heard from my hubby that the boss was an ex-convict & employed waiters & waitresses who were jailed before. Pretty proud of what the boss has done. Frankly speaking, it's a rare case that employers will employ people who were jailed before. So, it's better to be your own boss! His great determination and courage really impressed me. Good job!

I am glad that they allow reservation as I always see long queue outside the restaurant. When I walked in, I was pretty surprised on the casual environment because the entrance looked beta! Also, most customers were students which I wonder why. Maybe students like this type of environment as it looks like an university canteen to me.

They have a procedure where you have to write your order on the order slip & then make payment at the cashier counter.

Most people said their baked rice was good but I ordered the baked pasta instead. They allow you to choose your own ingredients. So the 2nd ingredient onwards, there will be a price where you need to top up. There are three choices to add to your main course as a set meal so I chose the one with a drink & soup. We also ordered a snack platter with cheese sauce to share too.

Recipe for Lemon Blueberry Cupcakes

Feel like trying out how a cupcake taste like with lemon & blueberries so I decided to bake on last weekend!

Well...maybe I am not a blueberry lover so I still prefer the one with raisins...but afterall, it still taste good :) 

Recipe source from the blogger called Rasa Malaysia & I have actually amended quite abit.The milk really made a big difference in the taste! So, credits go to Rasa Malaysia!

Lemon Blueberry Cupcake



Ingredients
250g salted butter
200g self-raising flour
200g castor sugar
4 eggs
4 tablespoons fresh milk
1 teaspoon vanilla essence
1/4 cup blueberries
1 lemon

Method
1. Preheat oven to 180 degree C.
2. Sift the flour.
3. Use an electronic beater to mix butter and sugar until well combined or pale yellow in color.
(Note: Sugar has not dissolved yet).
4. Add in one egg at a time. Beat well after each addition of egg until creamy.
5. Scrape down the sides for even mixing.
6. Add in vanilla essence and mix well.
7. Fold in the flour into the mixture and mix well.
8. Add in the milk and fold in the blueberries. 
9. Finally, add in the lemon juice & mix well.
10. Fill the prepared cupcake cups with batter 3/4 full, and bake in the preheated oven until a toothpick inserted in the center comes out clean, about 20-25 minutes. Let the cupcakes cool in the pans for about 10 minutes before removing them to finish cooling on a rack.

Hor Fun @ Holland Village Hawker Centre

Most people shared on the famous hor fun at Holland Village Hawker Centre but I find it so so & the portion is really pathetic to the max so I rather introduce the huge portion one which the Cze Char stall is selling.

I went there for lunch just now & ordered their Seafood Hor Fun. Generous portion on the gravy & hor fun! It really taste good. I don't like those that served it with fishcake coz it will be very salty. But this stall's one consists of fish slices, vegetables & prawns. Everything taste so fresh & good. Price is reasonable as well!

Their stir-fry pork rice with spring onion & sweet & sour pork are good. I tried before. They have a few main courses like rice with chicken/beef/pork (different styles) with 荷包蛋. I think it costs less than $5.

Do consider it for lunch! :)

Take Light Dinner Everyday to Slim Down

I find that taking a light dinner every night, does help in speeding up the losing-weight process.

A light dinner means to eat those food which has low fats & carbs. Not in terms of quantity.

I would suggest either steamed, baked food & less rice OR a main course - soupy food like porridge or soup with rice vermicelli, macaroni etc. Noodles is not recommended.

Also, I will never torture myself just to look better. We must eat till we feel full. If we starve ourselves, our metabolism will slow down. Furthermore, we should not be eating anything after 8pm & sleep before 11pm. This will definitely helps. We must have at least 7-8 hours of sleep everyday so that our weight will not increase easily on top of having a light dinner. I guess everyone should have already known this long time ago. It's just the determination that most lacks of.

I had baked garlic salmon & vegetables yesterday with 2 tablespoons of crystal brown rice & my belly was smaller this morning. I realised that if I eat more on the night before, my belly will be slightly bigger. So, salmon does help in flattening my belly. :)

If you feel that this is not full enough, you may go with a soup, fruits or just grab some baked almonds (less than 10). This is what I have been doing.

Lunch @ Hungrywich's

My colleague wanted to have sandwich for lunch yesterday so we went to our favourite cafe called Hungrywich's.

I always order the Teriyaki Chicken sandwich & I paid an additional of $4.70 to get a soup & a drink. They have different types of soup on different days.

Mango Milk Pudding from Paris Baguette

Met up with the sisters & bride for wedding discussion yesterday & the bride bought us bubble tea from KOI, snacks from Old Chang Kee & milk pudding (original & mango flavour) from Paris Baguette! It's so sweetttttttttt of her! Furthermore, we met up at one of the sisters' condo & her unit was near the swimming pool. It was so cool to discuss there thou the sun was strong but it doesn't matter coz the sisters were fun! I really enjoyed myself in the discussion!

Anyway, back to the key point here...ok, I don't really bother to follow the trend as in on what the latest food/beverage in town is. I would just eat where there's no queue or just happened that my friends will buy it for me to try. So happened that I always wanted to try the milk pudding from Paris Baguette & I gotta try it yesterday! I chose the mango flavour as I love mango! :P

The texture was so soft! I really feel like as if I'm in the heaven when I was eating this! I know my description sounds abit drama but I'm a dessert lover so definitely will feel HIGH when I gotta taste nice dessert! It's abit sweet thou but I really love this coz different layers have different type of taste. You have to eat it slowly...it's just like sipping a glass of red wine...Like I mentioned before...I'm a very fussy person so when it comes to eating, the ambience must be right & food must be good! So this was the feeling that I got yesterday! ^^
